Squid is becoming more and more popular, but despite its reputation for being enormous, it is actually quite little at first. Ecuador is the source of our young squid. You could hold half a dozen of these little fish in your palm. They come frozen in a pillow pack that you’ll probably use all at once. However, if you don’t need to use the entire block at once, you may defrost it in the refrigerator for six hours, then split it and freeze the parts you don’t need right now. The young squid just need to be cleaned for a second because they are frozen after emerging from the water!
